Keto Cauliflower Fried Rice

Ingredients (serves 3):

  • 1 medium cauliflower, grated (or 3 cups riced cauliflower)

  • 2 tbsp sesame oil

  • 2 eggs, scrambled

  • ½ cup diced chicken breast or shrimp

  • ½ cup mixed veggies (zucchini, bell pepper, spinach)

  • 2 tbsp soy sauce or coconut aminos

  • 1 tsp grated ginger

  • 2 green onions, chopped


Instructions:

  1. Heat sesame oil in a wok. Add chicken/shrimp and cook until done.

  2. Push meat aside, scramble eggs in the same pan.

  3. Add cauliflower rice, veggies, ginger, and soy sauce. Stir-fry for 5–7 minutes.

  4. Garnish with green onions and serve warm.
