Keto Cauliflower Fried Rice

Ingredients (serves 3):
1 medium cauliflower, grated (or 3 cups riced cauliflower)
2 tbsp sesame oil
2 eggs, scrambled
½ cup diced chicken breast or shrimp
½ cup mixed veggies (zucchini, bell pepper, spinach)
2 tbsp soy sauce or coconut aminos
1 tsp grated ginger
2 green onions, chopped
Instructions:
Heat sesame oil in a wok. Add chicken/shrimp and cook until done.
Push meat aside, scramble eggs in the same pan.
Add cauliflower rice, veggies, ginger, and soy sauce. Stir-fry for 5–7 minutes.
Garnish with green onions and serve warm.
