Keto Avocado Egg Salad

Ingredients (serves 2):
2 ripe avocados
4 hard-boiled eggs, chopped
2 tbsp mayonnaise (sugar-free, avocado oil preferred)
1 tsp Dijon mustard
1 tbsp lemon juice
Salt & pepper to taste
Fresh parsley for garnish
Instructions:
Scoop avocados into a bowl and mash slightly.
Add chopped eggs, mayo, mustard, lemon juice, salt, and pepper.
Mix gently until creamy but chunky.
Garnish with parsley and serve in lettuce wraps or on keto bread.
